Pretreatments...

@Judy: it's a very common way to make mushrooms, to pickle them here in the 'North Pole'. I have some old recipes from my Granny, who got them from her mother and so on. Some sort of mushrooms are better when you dry them, some like to soak in salt and some are suitable to the freezer. But our grannies didn't have freezers, they only used salt, sugar and vinegar to preserve (all kind of) food for the long winter. I have many kind of pickle recipes, some of them are sweet with lots of sugar, (delicious with a ham or a lamb steak for example) without sugar, with lemon, you name it ;) Oh yes, frying pan, butter, some chopped onion, salt and pepper and maybe parsley, what could be more delicious!
